Peel the tomatoes, remove the seeds, then cut the pulp into cubes. Mix shredded ginger, shallots and garlic in a deep bowl. After it you should add oil and vinegar, and wait until the mixture will boil. Reduce the fire to medium, add the tomatoes and cook them for 12-15 minutes, until the mixture will obtain pasty consistency.

Move all the mixture into different cup, chill it, add chopped basil, parsley and chives, then salt and pepper your canning stewed tomatoes.
